Brussels and olives and eggplant, oh my! Seasonal specials are here10.18.16


The leaves are changing, a chill is in the air, and autumn menu changes are afoot here at VERTS! Starting this Friday, October 21st, all of our restaurants will carry some tempting new seasonal offerings: fried brussels sprouts, savory eggplant dip, and marinated green olives. All three of these items add a real pop of fall flavor to your favorite bowls, salads, and pitas, and we can’t wait for you to try them!

Brussels sprouts are a fall favorite, and Chef Kate perfected them in the test kitchen to make sure they could stand up to our bold flavors. Our brussels are lightly fried with lemon zest and just a pinch of sugar, and their strong texture can stand up to any combination of toppings and sauces.


Perfectly bite-sized green manzanilla olives are a familiar ingredient in many Mediterranean dishes. Our little flavor bombs are marinated in-house; we soak them in a delightful combination of olive oil, lemon, chili flakes, and garlic. Don’t worry, we’ve already pitted them for you, too.

If you’re looking for some rich, creamy goodness to add to your usual VERTS order, our eggplant dip is calling your name. It adds a smoky, earthy element to any entree, and you know what it won’t add? Tons of fat or calories. The texture of the eggplant itself is thick and creamy enough, itself, no dairy necessary. That’s right, our eggplant dip is completely vegan! Think of it as our hummus’ funky, earthy little sister. Word to the wise: it tastes great with our brussels sprouts.


Sadly, this means we’re bidding adieu to our beloved grilled corn, but as summer comes to an end, so does the seasonality for this crowd favorite. Our produce selection will continue to rotate, so there’s a good chance we’ll be seeing our friend corn again someday.

We also have big news for our bowl lovers out there: we’re adding quinoa as a base option! Our culinary team loves quinoa because it’s super hearty and healthy, not to mention being gluten-free and vegan. (Learn more about the benefits of quinoa here!)
